Ingredients
1 Red onion
6-8 Campari Tomatoes
1 Green Bell Pepper
1 Yellow Bell Pepper
1 Cup Dry Quinoa
2 Cups Spring or Distilled Water
1-2 Tsp Sea Salt
1 Tsp Oregano
1 Tsp Pepper
1 Tbsp Grape seed Oil
Fresh Parsley
Instructions
1. Preheat oven to 400 degrees.
2. Roughly chop vegetables and season with salt, pepper, and oregano.
3. Arrange vegetables on a baking sheet. Top with 1 tablespoon of grape seed oil.
4. Bake vegetables for about 25 minutes.
5. Put 1 cup of quinoa and 2 cups water in a small pan. Season with salt.
6. Bring water to a boil, then simmer quinoa for 15 minutes.
7. Put quinoa in your bowl first as the base, then add roasted vegetables. Top with fresh parsley.
