Mini Alkaline Apple Pies

Picture this: the perfect fall day, walking through an orchard full of apples of every kind - fuji, pink lady, gala, you name it! We settled on Gala Apples, not just because they were cute, but also for their incredible healing properties. With our basket full of these beauties, we headed home, dreaming of a classic apple pie.

But then, life happened. Of course, we had no pie pan in our kitchen. But did that stop us? Absolutely not. Instead, we whipped up these adorable, imperfect mini pies. And you know what? These pies turned out to be little bites of perfection.

If you're in the mood for a simple, delicious adventure in baking, you're in the right place. This recipe is awesome because it's simple and the ingredients are healthy! Here's how you make mini alkaline apple pies:

3 lbs Gala Apples

1/2 cup Agave

1/2 cup Date Sugar

1/2 tsp Sea Salt/1 tsp Sea Salt

1/4 tsp Ground Cloves

2 cups Spelt Flour

1/3 cup Grapeseed Oil

1/2 cup Spring Water

Preheat oven to 425 degrees Fahrenheit.

  • Peel, remove core, and slice Gala Apples.
  • In a large pan or skillet, combine apples, agave, date sugar, cloves, and 1/2 tsp of sea salt.
  • Simmer apples on Medium-Low for about 15 minutes or until they are tender.

  • Mix spelt flour and 1/2 tsp sea salt in a bowl.
  • Slowly add grapeseed oil while mixing. Add spring water slowly until a dough ball forms. If dough is too sticky/wet, you can add more flour little by little.

Mini Pies:

  • Cut dough ball into 2 sections.
  • Roll out 1 section of dough and cut circles to fit a muffin tin.
  • Gently press dough into muffin cups, forming mini pie crusts.
  • Fill each crust with the apple mixture.
  • Roll out other section of dough and cut into small strips.
  • Lay the strips over the apples in a crisscross pattern to create the top layer of crust.

  • Bake for 30 minutes or until crusts are golden brown.
  • Allow pies to cool slightly before serving.

These mini alkaline apple pies can be enjoyed warm or at room temperature. We enjoyed some right out of the pan and also some the next day at room temp. These pies might not be perfect, but they're made with love - which makes them so delicious!

*This recipe makes 6 mini pies, or 1 regular sized pie (if you have a pie pan)*
